Unsaved Banana Pudding Icebox Pie

Ingredients

Serves 6

  • 12 oz whipped cream cheese
  • 1 cup(s) heavy whipping cream
  • 8 oz whipped topping
  • 3 2/5 oz instant French vanilla pudding, 1 small box
  • 2 large bananas, semi ripe, peeled and diced or chopped
  • 12 oz vanilla sandwich cookies, gently crushed

Instructions

  1. Place all ingredients except cookies in a stand mixer with whip attachment or in a large bowl using a hand mixer.
  2. Mix until custard is creamy, fluffy and bananas are well incorporated. Set aside.
  3. To assemble, spread approximately 1/3 of custard evenly in the bottom of an 8x8-inch casserole dish. Add a layer of crushed cookies on top.
  4. Evenly add another 1/3 of custard over cookies and place another layer of crushed cookies on top of custard.
  5. Finish by adding remaining 1/3 of custard mixture over cookies and spread evenly.
  6. Cover with plastic wrap and refrigerate for at least 8 hours or overnight to allow custard to set and cookies to soften slightly.
  7. To serve, use a knife to cut even portions and use a spoon to scoop out pie. Garnish with whipped cream if desired.
  8. Chef's Note: To decorate and add extra flavor, sprinkle a little fresh cinnamon over pie before serving.
