
Asparagus Caesar with Pecorino and Hazelnuts

Ingredients
- 24 oz Asparagus, hard ends trimmed
- 5 Anchovies, oil drained
- 3 Peeled garlic cloves
- 1/4 cup Capers, drained
- 1/3 cup Fresh lemon juice
- 2/3 cup Grated pecorino romano cheese, divided use plus more as needed for garnish
- 1 1/2 tsp Dijon mustard
- 1/2 cup Cold water
- 1 cup Extra virgin olive oil
- 2.2 oz Chopped hazelnuts, lightly toasted in dry pan, then cooled.
Instructions
- Bring a large pot of salted water to a boil. Add asparagus and cook fully submerged for exactly 2 minutes.
- Remove asparagus to a pan of ice water to stop the cooking process. Remove asparagus and allow to drain and dry fully.
- While asparagus cools, place anchovies in a blender along with garlic, capers, lemon juice, pecorino, mustard and water.
- Blend until a smooth paste forms then add olive oil slowly while blender is running until dressing is emulsified.
- Season dressing to taste with salt and cracked pepper as needed. Cover and refrigerate until ready to use.
- To assemble salad, spread asparagus out on a platter and drizzle dressing over center of asparagus. Garnish with lots of pecorino and chopped hazelnuts.
- Chef's Note: Refrigerate unused dressing for up to 3 days.
