Asparagus Caesar with Pecorino and Hazelnuts

Unsaved Asparagus Caesar with Pecorino and Hazelnuts

Ingredients

  • 24 oz Asparagus, hard ends trimmed
  • 5 Anchovies, oil drained
  • 3 Peeled garlic cloves
  • 1/4 cup Capers, drained
  • 1/3 cup Fresh lemon juice
  • 2/3 cup Grated pecorino romano cheese, divided use plus more as needed for garnish
  • 1 1/2 tsp Dijon mustard
  • 1/2 cup Cold water
  • 1 cup Extra virgin olive oil
  • 2.2 oz Chopped hazelnuts, lightly toasted in dry pan, then cooled.

Instructions

  1. Bring a large pot of salted water to a boil. Add asparagus and cook fully submerged for exactly 2 minutes.
  2. Remove asparagus to a pan of ice water to stop the cooking process. Remove asparagus and allow to drain and dry fully.
  3. While asparagus cools, place anchovies in a blender along with garlic, capers, lemon juice, pecorino, mustard and water.
  4. Blend until a smooth paste forms then add olive oil slowly while blender is running until dressing is emulsified.
  5. Season dressing to taste with salt and cracked pepper as needed. Cover and refrigerate until ready to use.
  6. To assemble salad, spread asparagus out on a platter and drizzle dressing over center of asparagus. Garnish with lots of pecorino and chopped hazelnuts.
  7. Chef's Note: Refrigerate unused dressing for up to 3 days.
