Ingredients
- 5 oz Fresh arugula
- 1/2 cup Shaved Parmesan
- 2 tbsp Extra virgin olive oil
- 3 tbsp White truffle oil
- 3 tbsp Fresh squeezed lemon juice
Instructions
- In a large bowl combine arugula and Parmesan, tossing well to evenly distribute cheese.
- Add remaining ingredients and toss until leaves are coated. Season with salt to taste and serve immediately.
- Chef's Note: You can leave out the truffle oil if desired and just use olive oil. Add more lemon juice and oil as needed to taste.
