- 2 cup(s) white rice
- 1 each bay leaf
- 1/4 tsp ground turmeric
- 1/2 tsp ground cumin
- 1 tbsp salt, divided use
- 3 tbsp avocado oil, divided use
- 3 cup(s) chicken broth
- 2 tsp garlic, minced
- 1 small yellow onion, julienned
- 1 small green bell pepper, seeds, stem, and ribs removed, julienned
- 3/4 cup(s) frozen green peas
- 1/2 cup(s) pimentos, diced
- 1 cup(s) tomato sauce
- 2 lb shrimp, peeled and deveined
Instructions
- In a medium pot with a lid, add rice, bay leaf, turmeric, cumin, half the salt, and 1 tbsp of oil. Stir to combine then add chicken broth and place over medium-high heat.
- When rice comes to a low boil, reduce heat to low, cover, and cook for 15 minutes or until all the liquid is absorbed. Remove from heat and keep warm.
- While rice is cooking, heat a large skillet over medium-high heat and add remaining oil. When oil is hot, add garlic, onions, and bell peppers. Cook for 2 minutes until vegetables have softened.
- Add peas and pimentos, and stir to combine. Pour in tomato sauce and add remaining salt. Add shrimp, stir and reduce heat to medium. Cover and cook for 7 minutes, stirring occasionally, until shrimp are no longer opaque.
- To serve, place rice in the bottom of a bowl and top with a portion of shrimp and vegetable mixture.
