Amish Style Buttermilk Biscuits

Unsaved Amish Style Buttermilk Biscuits

Ingredients

  • 2 cup(s) self rising flour
  • 2 cup(s) cake flour
  • 1/4 cup(s) granulated sugar
  • 2 1/2 tsp fine sea salt or kosher salt
  • 1 tbsp baking powder
  • 8 oz unsalted European style butter, very cold, shredded on a cheese grater or cut into very small pea sized pieces
  • 1 2/3 cup(s) full fat buttermilk, very cold, 1% buttermilk will work if full fat is not available
  • 2 large egg yolks, whites discarded or saved for another use
  • 1/3 cup(s) water

Instructions

  1. In a large bowl, combine flours, sugar, salt, baking powder and shredded butter.
  2. Mix well to incorporate and make sure butter is evenly distributed.
  3. Add buttermilk and mix until dough just comes together and all flour is mixed and incorporated. Form dough into a ball, cover and refrigerate for at least 45 minutes to 1 hour.
  4. Preheat oven to 425°F. In a small bowl whisk together egg yolks and water and set aside.
  5. Once dough has rested roll out dough into approximately a 1/2 inch square.
  6. Fold the dough like a book to create layers, then roll out dough again to the same square shape and book fold again. Repeat folding of dough 3 times total.
  7. Roll out dough again to approximately 1/2-inch thick and cut out biscuits using a 3-inch biscuit cutter. Rework and roll out dough scraps to get a few more biscuits if desired.
  8. Place biscuits onto a sheet pan lined with parchment paper so all biscuits are touching and no space is between them.
  9. Brush tops with egg yolk mixture and bake for 15 to 20 minutes or until biscuits are golden brown and puffed up.
  10. Allow to cool slightly, then serve with your favorite condiments.
