
Al Pastor Chicken Tacos

Ingredients
Serves 6
- 3 cup(s) Mi Tienda Pineapple Agua Fresca
- 3 1/2 oz chipotle peppers in adobo sauce, rough chopped
- 1/4 cup(s) lime juice
- 2 tbsp olive oil
- 3 lb boneless skinless chicken thighs
- 3/4 oz chopped cilantro
- 2 1/2 oz diced white onion
- 11 oz fresh pineapple chunks, quartered
- 3 tbsp Davila's BBQ Rub
- 12 each Mi Tienda Yellow Corn Tortillas, warmed
Instructions
- In a large bowl combine agua fresca, chipotle peppers and sauce, lime juice, and olive oil. Whisk to combine then add chicken and cover with plastic wrap. Set aside to marinate for 3 hours stirring occasionally.
- While chicken marinates combine cilantro, white onions, and pineapple in a small bowl and stir to combine. Season with salt if desired. Cover and reserve for later use.
- Heat a gas or charcoal grill to medium-high heat. Remove chicken from marinade and discard marinade. Pat chicken dry with a paper towel.
- Sprinkle both sides of chicken with BBQ rub and spray with non-stick spray. Grill for 6 minutes per side or until internal temperature reaches 165ºF.
- Let chicken rest for 5 minutes after removing from grill. Slice into strips and serve in warm tortillas and top with pineapple cilantro relish.
