Unsaved Achiote Roasted Cauliflower Tacos

Ingredients

  • 10 oz Cauliflower florets
  • 1 tsp Mi Tienda Achiote seasoning, plus more as needed to taste
  • 1/4 cup Extra virgin olive oil
  • 4 Bakery fresh tortillas, plus more as needed
  • 1/2 cup Mi Tienda Queso Fresco, crumbled or shredded plus more as needed
  • 1/2 cup H‑E‑B Mi Tienda Molcajete Style Salsa Tomatillo – Medium, as needed to garnish

Instructions

  1. In a bowl combine cauliflower, achiote seasoning and olive oil. Toss well to coat.
  2. Line a sheet pan with parchment paper. Arrange cauliflower on sheet pan and roast until nicely browned, approximately 20 to 30 minutes.
  3. To serve, place a few cauliflower florets on each tortilla and top with queso fresco and fresh salsa.
  4. Chef's Note: This taco goes great topped with "toasted cumin yogurt." Recipe on heb.com.
