
Achiote Roasted Cauliflower Tacos

Ingredients
- 10 oz Cauliflower florets
- 1 tsp Mi Tienda Achiote seasoning, plus more as needed to taste
- 1/4 cup Extra virgin olive oil
- 4 Bakery fresh tortillas, plus more as needed
- 1/2 cup Mi Tienda Queso Fresco, crumbled or shredded plus more as needed
- 1/2 cup H‑E‑B Mi Tienda Molcajete Style Salsa Tomatillo – Medium, as needed to garnish
Instructions
- In a bowl combine cauliflower, achiote seasoning and olive oil. Toss well to coat.
- Line a sheet pan with parchment paper. Arrange cauliflower on sheet pan and roast until nicely browned, approximately 20 to 30 minutes.
- To serve, place a few cauliflower florets on each tortilla and top with queso fresco and fresh salsa.
