Ingredients

  • 2 cup(s) Aldecoa Mexico Whole Bean Coffee, brewed strong, plus more as needed
  • 5 large egg yolks, egg whites discarded or saved for another use
  • 3/4 cup(s) granulated sugar
  • 16 oz mascarpone cheese
  • 1 1/2 cup(s) heavy whipping cream
  • 1/2 tsp fine sea salt
  • 1 tsp ground cinnamon
  • 1 tbsp vanilla extract
  • 7 oz lady fingers, plus more as needed
  • 1/4 cup(s) cocoa powder, or as needed for dusting

Instructions

  1. Grind and brew coffee strong, pour into a shallow dish and allow to cool before proceeding with recipe.
  2. Using a hand mixer or stand mixer with whisk attachment whip egg yolks and sugar together until fluffy and pale in color.
  3. Add mascarpone, heavy cream, cinnamon, salt and vanilla. Whip until stiff peaks, set aside.
  4. Using a 8 x 8 inch casserole dish dip lady fingers in coffee quickly to just coat, place a tight layer of ladyfingers as bottom layer.
  5. Divide cream mixture in half and spread half over first layer of lady fingers evenly level. Dust cream with cocoa powder evenly to cover.
  6. Repeat entire process making another layer by dipping lady fingers and topping evenly with remaining cream, dust top again with cocoa powder to finish.
  7. Cover and refrigerate for at least 4 hours to allow cream to set up and cookies to soften. Overnight yields best results.
  8. Chef's Note: This can be made a day in advance of use, then cut and served as needed.
