Ingredients

  • 4 cup(s) H‑E‑B Essential Grains 12 Grain Sliced Bread, approximately 5 to 6 slices, sliced into small squares croutons
  • 2/3 cup(s) extra virgin olive oil, divided use, 1/3 cup for croutons and 1/3 cup for salad dressing
  • 1 tbsp Italian seasoning, plus more as needed
  • 10 oz H‑E‑B Fresh Hearts of Romaine Lettuce
  • 12 oz H‑E‑B Cloud 9 Medley Tomatoes, washed and cut in half
  • 1 cup(s) fresh basil, roughly chopped or torn
  • 1/2 cup(s) red onion, thinly sliced or julienned
  • 2 tsp dried oregano, or as needed to taste
  • 2 tbsp Dijon mustard
  • 1/4 cup(s) red wine vinegar
  • 2 tsp fresh garlic, minced fine or zested

Instructions

  1. Preheat oven to 400ºF. Line a sheet pan with parchment paper and set aside.
  2. In a bowl combine diced bread with olive oil, Italian herb seasoning and a liberal pinch of salt and pepper.
  3. Place bread on prepared sheet pan and bake 10 to 15 minutes or until croutons are nicely browned and crispy.
  4. Remove from oven and cool completely before assembling salad.
  5. Toss romaine, tomatoes, basil, and red onions together in a large bowl, and season with a generous pinch of salt and pepper. Set aside.
  6. To make vinaigrette, whisk mustard, vinegar, oil and garlic together. Pour over salad and toss to coat well.
  7. Serve immediately, season to taste as needed. Add in mozzarella pearls or diced provolone for extra flavor if desired.
