Description
Our 100 % Iberico breed pigs are raised on the Trail's End Ranch in the Texas Hill Country by rancher and owner Ashly Martin. They spend their days roaming freely, eating acorns, grass, herbs, sweet mesquite beans, prickly pear fruit and any other goodies they can find. Their diet infuses the pork with intense flavor, and plentiful exercise means the pork is marbled with flavorful fat, perfect for making delicious cured meats. With an active lifestyle and exceptional genetic characteristics, Iberico pigs produce some of the healthiest meat available anywhere. Texas Iberico® pasture-raised pigs are never given antibiotics and our pork is Animal Welfare Approved, acknowledged by Consumer Reports as the only highly meaningful food label for farm animal welfare.
Chorizo- This artisan cured chorizo sausage is thinly sliced and ready to enjoy. It is made with 100% Ibérico pork from pigs pasture-raised in the Texas Hill Country eating acorns, mesquite beans and prickly pear fruit. Seasoned with smoky paprika from western Spain, this chorizo has a firm texture and a touch of spiciness. We slice the chorizos fresh at La Tienda.
Cured Ham- This artisan Texas Iberico® ham is aged for over 12 months and smoked over hickory wood. We cut this special ham into paper thin slices at La Tienda for you to savor at home. It is made with 100% Iberico pork from pigs pasture-raised in the Texas Hill Country that enjoy a diet of acorns, mesquite beans and prickly pear fruit.
Salami- Originating from the Mountains of Mexico, the smoked serrano pepper lends itself to the buttery rich flavor of Iberico Pork.
