Description
Garnet red color with aromas of ripe cherry, plum, strawberry jam, and sweet toasty oak. On the palate, juicy cherry fruit, lively acidity, and peppery spice. Benito Dusi Vineyard grapes, hand-harvested; destemmed and crushed; fermented on the native yeasts, followed by full malolactic on the naturally occurring bacteria; oak from barrel aging; minimum effective sulfur. Pad filtered at bottling. In keeping with their philosophy of minimal intervention, this is the sum of our actions. Pairs well with duck, red meat, and hearty vegetables.
Fermentation: 100% natural primary and secondary fermentation; 100% submerged cap; pressed at six days.
Barrels: 100% air-dried American oak barrels (77% Appalachian, 23% Ozark); 37% one year-old, 5% two years-old, and 58% three years-old.
Aging: Twelve months in barrel
