Joseph Carr discovered his love for wine at a young age, working his way up in the restaurant industry from a wine steward to a world-class sommelier and later, a wine executive. In 2005, he left it all behind to follow his dream of making his own wines from California. Josh Cellars was created as a tribute to founder Joseph Carr’s father, Josh. Our Chardonnay is picked at the peak of flavor development. The grapes are gently pressed to extract the most delicate juice before undergoing fermentation. The 10-to-15-day fermentation is a gentle cool process whereby we retain all the delicate fruit aromas and flavor. The wine is then matured with 25% new French oak which imparts a soft and creamy texture to the wine reminiscent of marshmallow and crème brûlée.
