Keep Refrigerated.- Arrange charcoal in half of the grill heat for 30 minutes or heat one side of the gas grill for 10 minutes with the lid closed. Sear meat directly over the heat 1 min/side, then move to cool side. Cook 50-60 min in a closed grill with the skin side up. Keep air temperature in chamber 350-400 degrees F. Remove chicken from the grill when the internal temperature reaches 170 degrees F. Let stand 10 minutes.
