  • Vegan Oat Bars

    Ingredients:

    1 cup oat flour
    1 cup rolled oats
    1 tsp cinnamon
    1 tsp baking powder
    ¼ tsp salt
    2 ripe bananas, mashed
    ½ cup oat, almond or soy milk
    2 Tbsp maple syrup
    1 tsp vanilla
    ¼ cup dried fruit pieces (dates, cherries, blueberries, etc.)
    ⅓ cup walnuts, chopped (optional)
    ¼ cup coconut flakes (optional)

    Preheat oven to 350°F. Line an 8" x 8" baking dish with parchment paper. In a large bowl, combine oat flour, oats, baking powder, cinnamon and salt. In another bowl, whisk together the mashed bananas, milk, maple syrup and vanilla. Combine wet and dry ingredients thoroughly. Fold in dried fruit or nuts. Put your mixture onto the baking dish, spreading evenly. Sprinkle on coconut or other desired toppings and press down gently. Transfer into oven and bake for 18 - 20 minutes until firm and lightly golden. Remove from the oven and place baking dish on a cooling rack for 10 minutes before slicing into bars. Makes about 12 bars.
