  • Heat oven to 450°F. Season fillet as desired. Measure at thickest point of fillet, then bake skin side down in upper 1/3 of oven for10 minutes per inch of thickness until fish begins to flake when tested with a fork and color turns from translucent to opaque (150°F internal temperature).
