  • BROWNED BUTTER COCONUT BARS 1/2 cup butter 2 cups organic coconut sugar 2 eggs 1 tablespoon vanilla 1 cup flour 2 teaspoons baking powder 1/4 teaspoon salt 1 1/2 cup H-E-B Organics® Unsweetened Coconut Heat oven to 350°F. Line a 9-inch square pan with aluminum foil, leaving edges long enough to easily fold over the top edges of the pan. Grease foil using non-stick cooking spray. Over medium heat, melt butter in pan and simmer until butter starts to foam and turn golden brown. Add coconut sugar. Remove pan from heat. Mixture will be thick, like wet sand. In a separate, medium-sized bowl, whisk together eggs and vanilla. Add the butter/sugar mixture to egg mixture. Stir well. In a separate, small bowl, whisk together flour, baking powder and salt. Add flour mixture to butter/egg mixture. Add coconut. Stir well to incorporate ingredients. Spread evenly in prepared pan and bake for 25 minutes. Cool for 30 minutes before removing from pan (cookies will be very crumbly if you try to cut them while hot). Lift out of pan by grasping edges of the foil and place on cutting board to cut. Makes about 36 bars.
