  • Heat charcoal for 30 minutes or gas grill for 10 mins with lid closed. Grill 4" above medium heat. Hold palm just above grate. If heat causes you to pull away in 4 seconds, heat is ideal (375 deg F). Cook on an open grill for 25-30 min/side depending on thickness. Remove when 135 degrees F internal temperature. Slice thinly across the grain.
