  • Cooking Instructions: Range Top: 1. Bring 2 cups water to a boil in a medium saucepan*. 2. Stir in 1 cup of rice, cover. Reduce heat and simmer for 20 minutes or until water is absorbed. 3. Fluff lightly with a fork and serve. *Add 1 Tbsp margarine and 1 tsp salt per 1 cup uncooked rice, if desired. Mediterranean Sausage and Rice (Range-Top Recipe) 1 lb ground Italian sausage ½ cup onion, chopped 1 clove garlic, minced 3 medium zucchinis, sliced 1 can (14.5 OZ) Italian-style diced tomatoes 1 tsp dried oregano 1/8 tsp black pepper 3 cups H-E-B Medium Grain Enriched White Rice, cooked Ripe olives, sliced (optional) 1. Cook rice according to instructions above. Set aside. In large skillet over medium-high heat, brown meat, stirring to break into bits. Pour off all but 2 Tbsp of drippings. 2. Add onion and garlic. Cook until translucent. Add zucchini, diced tomatoes, oregano, and black pepper. 3. Cover and simmer 5-10 minutes, stirring occasionally, until zucchini is tender. Add cooked rice and stir to combine. If desired, garnish with sliced ripe olives and serve.
