Keep Refrigerated.- Heat oven to 325 degrees F. Rub roast with oil and season as desired. Place on a rack in a shallow roasting pan. Roast, uncovered in the center of oven 30-35 min/lb until a meat thermometer in center reads 150 degrees for Medium doneness. Let stand 15 minutes before carving.
