  • Oven:
    Preheat oven to 350°F. Rub roast with oil and apply seasoning to all sides. Place roast fat side up on a rack in a shallow roasting pan. Cook uncovered for 40 - 43 minutes per lb. Remove from oven when internal temperature reaches 150°F. Let stand for 15 minutes before carving.
