  • Grill: Heat charcoal for 30 minutes until ash-covered or gas grill for 10 minutes with lid closed. Season or marinate steaks as desired. Grill about 4" above medium heat (375°F is ideal). Cook for 7 - 8 minutes per side for medium-rare doneness (140°F internal temperature) or 9 - 10 minutes per side for medium doneness (150°F).
