  • Grill: Heat charcoal for 40 minutes until ash-covered or gas grill for 10 minutes with lid closed. Season or marinate meat as desired. Grill steaks about 4" above medium-low heat (325°F is ideal). Cook 10 - 11 or 12 - 13 minutes per side. Remove when steaks reach an internal temperature of 135°F (medium rare doneness) or 150°F (medium well doneness).
