Preheat oven to 300°F. Season roast and place bone-side down in shallow roasting pan. Bake uncovered in center of the oven for 22 - 26 minutes per pound. Remove from oven when meat thermometer reaches 130°F. For a juicier roast, let rest for 15 minutes before carving.
