Keep Refrigerated- For 10 cups stock: use 5 lb bones roast bones with large chunks of onion carrot and celery in oiled pan 40 minutes in 425 degree oven. Stir to prevent burning; move to stock pot. Cover with 16 cups water add parsley, thyme, bay leaf & celery leaves. Simmer over low heat 8 hours.
