Central Market organic heirloom corn masa harina made from heritage varieties of grains traditionally passed down through generations of farmers and crops that are exclusively non-irrigated and free from agrochemicals, GMOs, or hybrid modifications. Heirloom masa has a nuttier, earthier flavor compared to the more neutral, corn flavor of other masas in the set, and press out to be slightly thicker and coarser in texture. The organic yellow corn masa has denser starch content to support the structure of larger tortillas.
