Contrary to being covered in salt, bacalhau isn’t necessarily salty! The salt is a preservation method, but the final product is dense and flaky, much like fresh cod.
If you’re bringing home salted cod, remember to plan ahead. Bacalhau needs a long soak—think 2-3 days in the refrigerator—and requires changing the water out every 12 hours.
