Mediterranean Lamb Kabobs

Recipe makes 8 Servings

2 Lb boneless leg of lamb, cut into 1 1/2 inch cubes
2 Tbsp H-E-B Olive Oil
6 H-E-B Peeled Garlic, chopped
1/2 cup(s) H-E-B Ready Fresh Go! Diced White Onions
1 Tbsp fresh oregano, chopped
1 Tbsp fresh thyme, chopped
1 Tbsp fresh mint, chopped
1 lemon, juiced
1/2 Tsp salt
1/2 Tsp ground black pepper
1 red bell pepper, cut into 8 squares
1 large yellow onion, chopped in wedges
8 mushrooms
8 H-E-B Champagne Sweet Tomatoes
1 green bell peppers, cut into 8 squares

Combine lamb, olive oil, garlic, diced onion, oregano, thyme, mint, lemon juice, salt, and pepper in a zipper bag. Seal bag and marinate in refrigerator for 1 hour or until ready to grill.
Assemble kabobs in following order: red pepper, lamb cube, onion wedge, lamb cube, mushroom, lamb cube, tomato, lamb cube and green pepper.
Heat gas or charcoal grill to 400°F.
Spray grilling mesh with no-stick spray and set over a foil lined baking sheet. Arrange lamb kabobs on grilling mesh and place on hot grill.
Grill kabobs 10 minutes, turning once during grilling time.
