6 Oz Chorizo de San Manuel Chorizo, removed from casing
1 Lb Fud Oaxaca Cheese
1/2 lime, juiced
1 Tbsp cilantro, chopped
18 H-E-B White Corn Tortillas

Instructions

Preheat oven to 400°F.

Preheat cast iron skillet to medium-high and cook chorizo about 5 minutes, breaking apart with a spoon while cooking.

Place cheese in center of chorizo, and bake 15 minutes or until bubbly.

Garnish with a squeeze of fresh lime juice and chopped cilantro.

Serve with warmed tortillas.
