  • 6 oz chorizo, removed from casing
  • 1 lb oaxaca cheese
  • 1/2 each fresh lime(s), juiced
  • 1 tbsp fresh cilantro, chopped
  • 18 each white corn tortillas

Instructions

  1. Preheat oven to 400°F.
  2. Preheat cast iron skillet to medium-high and cook chorizo about 5 minutes, breaking apart with a spoon while cooking.
  3. Place cheese in center of chorizo, and bake 15 minutes or until bubbly.
  4. Garnish with a squeeze of fresh lime juice and chopped cilantro.
  5. Serve with warmed tortillas.
