  • 3 tbsp Roasted garlic hummus
  • 3 tbsp Olive tapenade
  • 1 cup Sweet tomatoes, thin sliced
  • 6 tbsp Tomato and basil crumbled feta
  • 1 cup Baby Spinach, thin sliced
  • 1 cup Mushrooms, thin sliced

Instructions

  1. Heat oven to 400°F.
  2. Line baking sheet with foil, spray with no-stick spray.
  3. Wrap tortillas in paper towel, microwave on high power for 1 minute, keep warm.
  4. Spread each tortilla with 1/2 tablespoon each roasted garlic hummus and olive tapenade.
  5. Arrange 4 thin tomato slices, 1 tablespoon crumbled Feta cheese, 1 tablespoon sliced baby spinach and 4 slices mushrooms down the center of each softened tortilla.
  6. Spray each filled tortilla with no-stick olive oil spray and roll like a taco, secure with a toothpick, and place on prepared baking sheet.
  7. Bake wraps on center oven rack for 15 minutes or until tortillas are crispy brown.
  8. Cut each wrap in half and serve.
