
Lentil Pasta with Shrimp and Pesto

Serves 4
Ingredients
- 8 oz Gluten-free organic yellow lentil penne pasta noodles, or your favorite GF pasta
- 1/2 cup Plain Greek style yogurt
- 1 cup Baby spinach, loosely packed
- 1 cup Fresh basil leaves, loosely packed
- 1/4 cup Grated Parmesan cheese, plus more as needed for garnishing
- 1/4 cup Roasted salted pepitas
- 2 Garlic cloves
- 3 tbsp Cold water
- 6 tbsp Extra virgin olive oil, divided use
- 1 1/2 cups Zucchini, diced small or cubed
- 1 lb Fresh or frozen wild shrimp, thawed completely if frozen
Instructions
- Cook pasta according to package instructions then drain, reserving 1/3 cup of pasta water for sauce. Set both aside.
- In a food processor add yogurt, spinach, basil, Parmesan cheese, pepitas, garlic, water and 3 tablespoons of olive oil.
- Blend until smooth and season to taste with salt and pepper. Set aside.
- Set a sauté pan over medium-high heat and add remaining 3 tablespoons of olive oil.
- When oil is hot, add zucchini and shrimp along with a pinch of salt and pepper. Stir-fry for 4 to 5 minutes.
- Add pasta and approximately 1 cup of pesto sauce and reserved pasta water to pan.
- Stir to combine and cook until sauce is just bubbly and shrimp are fully cooked. Remove from heat and garnish with more fresh Parmesan if desired.
- Chef's Note: Cover and refrigerate any leftover pesto sauce for up to 3 days.
