Lentil Pasta with Shrimp and Pesto

Unsaved Lentil Pasta with Shrimp and Pesto

Ingredients

  • 8 oz Gluten-free organic yellow lentil penne pasta noodles, or your favorite GF pasta
  • 1/2 cup Plain Greek style yogurt
  • 1 cup Baby spinach, loosely packed
  • 1 cup Fresh basil leaves, loosely packed
  • 1/4 cup Grated Parmesan cheese, plus more as needed for garnishing
  • 1/4 cup Roasted salted pepitas
  • 2 Garlic cloves
  • 3 tbsp Cold water
  • 6 tbsp Extra virgin olive oil, divided use
  • 1 1/2 cups Zucchini, diced small or cubed
  • 1 lb Fresh or frozen wild shrimp, thawed completely if frozen

Instructions

  1. Cook pasta according to package instructions then drain, reserving 1/3 cup of pasta water for sauce. Set both aside.
  2. In a food processor add yogurt, spinach, basil, Parmesan cheese, pepitas, garlic, water and 3 tablespoons of olive oil.
  3. Blend until smooth and season to taste with salt and pepper. Set aside.
  4. Set a sauté pan over medium-high heat and add remaining 3 tablespoons of olive oil.
  5. When oil is hot, add zucchini and shrimp along with a pinch of salt and pepper. Stir-fry for 4 to 5 minutes.
  6. Add pasta and approximately 1 cup of pesto sauce and reserved pasta water to pan.
  7. Stir to combine and cook until sauce is just bubbly and shrimp are fully cooked. Remove from heat and garnish with more fresh Parmesan if desired.
  8. Chef's Note: Cover and refrigerate any leftover pesto sauce for up to 3 days.
