Unsaved Crock-Pot Chicken Mole

Ingredients

  • 1 Hill Country Fare Whole Chicken
  • 1 tbsp Hill Country Fare Canola Oil
  • 1 tsp Hill Country Fare Fajita Spice
  • 8.2 oz H-E-B Mole Poblano
  • 2 cups Central Market Free Range Low Sodium Chicken Broth
  • 1/2 cup Cotija cheese, crumbled for garnish

Instructions

  1. Cut chicken into 8 pieces and remove skin if desired. Heat a large heavy-bottom skillet over medium heat for 3 minutes. Add canola oil and brown 3 to 4 pieces of chicken at a time, 2 minutes on each side. Place browned chicken in Crock-Pot.
  2. In the same skillet, dissolve mole in chicken broth and cook over medium heat until thickened, about 5 minutes. Add mole to browned chicken, cover, set Crock-Pot to high heat, and cook for 3 hours. Or cook on low heat for 6 hours. Garnish with crumbled cotija cheese. Season to taste with salt and pepper and serve.
