Unsaved Cottage Cheesy Egg Bites

Ingredients

  • 12 Large eggs, use 3 whole eggs and 9 extra egg whites
  • 1 1/2 cups Pasteurized egg whites
  • 1 cup Low fat cottage cheese
  • 1 cup Shredded Italian 6 cheese blend
  • 1.5 oz Baby spinach
  • 1/2 cup Green onions, finely diced

Instructions

  1. Preheat oven to 350ºF. Use oil or spray oil to coat the cups of muffin tins. Set aside.
  2. In a blender combine all ingredients. Blend until smooth. Season with salt and pepper if desired.
  3. Divide batter equally between muffin cups.
  4. Carefully place in oven and bake 28 to 30 minutes, or until eggs are set in the middle. Allow to rest for 10 minutes before removing from pan.
