Urad Dal or black gram is part of the same family as mung beans. One of the most highly prized pulses of India and Pakistan, black gram originates from India where it has been cultivated since the ancient times. Used widely to make dal, black gram has a sticky texture once boiled and allowed to split. A key ingredient in Idli-Dosa batter, Urad Dal is also widely used in many South Indian recipes.
