Description
Rogue is our flagship espresso. For this blend, we focus year-round on sourcing coffees with a ton of natural sweetness, full body, and delicate (not overwhelming) acidity. Sourcing carefully with espresso in mind allows us to produce a balanced, user-friendly espresso without needing to roast too dark. A shot of Rogue should taste like berry jam and melted chocolate with a lasting clean finish.
To prepare Rogue as a double shot of espresso, finely grind 17-18 grams of coffee. Add to the portafilter, making a level bed of coffee and then tamping it down. Insert the portafilter and pull your shot until 34 - 36 grams of liquid espresso has been produced. Stir and drink right away, or combine with steamed milk.
You can also enjoy Rogue as a drip coffee using your favorite machine or pour over method. We recommend 36 grams of medium-fine ground coffee per 20 oz (590 ml) of water.
