La India Tejano Seasoning
Preparation for beef picadillo: 1 tbls. Oil, 1 medium onion diced, 1 lb ground beef, 1 can tomato sauce 8 oz., 1 oz. fresh cilantro chopped, 1 carrot stick chopped, 1 medium sized potato chopped, 1 1/2 tbls. "La India" Tejano Seasoning, 2 fresh green serrano chile peppers. Preheat a 3 or 5 quart sauce pan. Add oil, wait for about 1 min. Add diced onions, cook, stirring, until onions begin to soften (about 5 mins.). Add ground beef and cook until well done (browned). Add the tomato sauce, "tejano seasoning", potatoes, carrots, cilantro & 2 whole serrano peppers. Add about 1 cup of water or enough to cover meat and vegetables. Bring to a boil; then reduce heat & cover & simmer until the flavors are blended & the vegetables are tender (about 30 mins). Add salt to taste.
