  • Heat charcoal for 40 minutes or one side of the gas grill for 10 mins with the lid closed. Bank coals in one half of the grill or reduce gas heat toward low. Sear meat directly over the heat for 2 min/side, then move to cool side. Place ribs bone side down on the cool side. Close lid. Cook 90 minutes. Turn after 45 minutes.
