  • Roast bones in a 425 degree oven. 20 minutes per side. Add bones and flavorful bits from the roasting pan to a stockpot. Cover with cold water. Slowly bring to a simmer. Skim gray foam from the top until broth is clear. Season broth. Cover. Simmer over low heat for 2 hours to make stock for soup, add chopped vegetables in the last hour.
