  • Grill: Heat charcoal for 30 minutes (until ash covered) or gas grill for 10 minutes with lid closed. Set grill to medium heat (375°F is ideal). Place ribs on grill and cook for 30 – 45 minutes. For medium-rare or medium doneness, remove at an internal temperature of 140°F or 150°F. Let ribs rest for 10 minutes before serving. Other Option: Sear and braise ribs at 350°F for 2 – 3 hours.
