  • Grill: Heat charcoal for 30 minutes (until ash covered) or gas grill for 10 minutes with lid closed. Set grill to medium heat (375°F is ideal). Cook flanken ribs for 4 – 8 minutes per side. Remove at an internal temperature of 140°F for medium rare or 150°F for medium doneness. Let ribs rest for 10 minutes before serving. Other Option: Pan-broil flanken ribs on medium-high heat for 4 – 7 minutes per side.
