  • For 10 cups stock, use 5 lb bones. Roast bones with large chunks of onion, carrot, and celery in an oiled pan for 40 minutes in a 425 degree oven. Stir to prevent burning. Move to stockpot. Cover with 16 cups water and add parsley, thyme, a bay leaf & celery leaves. Simmer over low heat for 8 hours.
