Keep Refrigerated.- Heat oven to 325 degrees F. Press seasonings onto the surface of the roast. Place on a rack in a roasting pan. Do not add water. Roast uncovered in the center of the oven for 35 min/lb until a meat thermometer in the center reads to 135 degrees internal temperature. Let stand 15 minutes before carving. Slice thinly across the grain.
