Keep Refrigerated.- For 10 cups of stock, use 5 lb bones. Roast bones with large chunks of onion, carrot, and celery in an oiled pan for 40 minutes in a 425 degree oven. Stir to prevent burning. Move to stockpot. Cover with 16 cups water then add parsley, thyme, a bay leaf, & celery leaves. Simmer over low heat for 8 hours.
