Ingredients

Recipe makes 8 Servings

1 Tbsp vegetable oil
1 Lb extra lean ground beef
1 Tbsp Adams Reserve Hatch Green Chile Ranch Rub
12 Oz H-E-B Pico de Gallo
15 1/2 Oz black beans, drained
1 cup(s) frozen corn
8 corn tortillas, sliced in 1-inch strips
1 cup(s) low fat sour cream
1/2 cup(s) green onion, chopped
1/2 cup(s) 2% cheddar cheese

Instructions

Preheat oven to 350°F.

Heat oil in a large skillet over medium-high heat.

Add ground beef, break apart and cook for several minutes until well browned.

Add seasoning and pico de gallo, then continue to cook for an additional 4 minutes.

Add in black beans, corn, tortillas, and low fat sour cream.

Mix well and transfer to a 9 x 13 baking dish.

Top with green onion and cheese.

Bake uncovered for about 40 minutes or until bubbly and browned.
