Purple Potato & Bacon Breakfast Hash

Recipe makes 6 Servings

12 Oz H-E-B Natural Pecan Smoked Uncured Bacon, diced
1 Lb purple potatoes, diced small or cubed
1 cup(s) white onions, julienned or thinly sliced
1 large red bell pepper, thinly sliced or julienned
2 garlic cloves, minced
1/4 cup(s) fresh chives, roughly chopped

Place a non-stick skillet over medium-high heat, add bacon and cook until fat is just starting to render.
Add potatoes and stir-fry 10 to 12 minutes or until they just start to soften. Stir in onions, peppers and garlic and stir-fry until nicely caramelized.
Turn heat down to medium-low and continue to cook until potatoes are nicely browned and soft. Remove from heat, season to taste and add fresh chives to garnish.
Chef's Note: Once hash is cooked, I like to top it with cheese and place it in the oven until nicely melted or top it with a sunny side up egg.
