Ingredients

Recipe makes 6 Servings

3 zucchini, shredded
1 Tbsp extra virgin olive oil
1 Tbsp garlic cloves, chopped
1/2 white onions, chopped
1 1/2 cup(s) whole wheat bread crumbs
1 egg, beaten
1/2 cup(s) Parmesan cheese
3 Tbsp basil, chopped
1 Tsp Italian seasoning
1 jar (24 oz.) marinara sauce

Instructions

Preheat oven to 375ºF.

Line a sheet pan with foil and spray with non-stick cooking spray. Set aside.

Using shredder attachment of food processor or box grater, shred the zucchini.

Place shredded zucchini into a clean dish towel and wring it, squeezing out all of the moisture.

Heat oil in a large non-stick pan. Add in zucchini, onion and garlic.

Cook the mixture for several minutes until most of the moisture has evaporated and onions are tender.

Remove mixture from heat and empty pan into a large bowl.

Add in remaining ingredients with the exception of the marinara sauce.

Mix ingredients well then form into 16 small balls.

Place them on the baking sheet.

Place baking sheet in oven and allow zucchini balls to bake for 20 minutes.

Once zucchini balls are cooked, return non-stick skillet to stove over medium high flame.

Add the balls to the skillet, add the marinara sauce.

Cook until sauce Is heated through.

Serve immediately.
