Recipe makes 6 Servings

2 cup(s) zucchini, cut into thin slices
7 Oz skinner fideo mediano
2 Tbsp olive oil
2 peeled garlic, chopped
1/4 cup(s) white onions, chopped
1/3 cup(s) queso cotija, grated

Instructions

Bring 2 quarts water to a boil over high heat in a 4 quart pot.

Add zucchini and bring water back to a boil.

Add fideo to zucchini and cook over high heat for 5 minutes.

Drain and set aside.

Using the same pot, combine oil or butter, garlic and onion.

Heat over medium high heat until onion becomes translucent; stir frequently.

Add zucchini and fideo and toss to combine.

Place in serving dish and top with grated cheese
