Za'atar Crusted Chicken with Spiced Cucumber and Tomato Salad

1 Lb H-E-B Extra Thin Sliced Chicken Breast
1 Tbsp Adams Reserve Za'atar Rub, plus more as needed to taste
2 cup(s) heirloom tomatoes, diced
1/3 cup(s) red onion, minced small
1 large English cucumber, diced
1/4 cup(s) fresh lemon juice
1 serrano pepper, thinly sliced or minced
1/3 cup(s) extra virgin olive oil, plus more as needed for searing chicken

Instructions

Season chicken liberally with za'atar and toss to coat. Set aside to marinate while preparing tomato salad.

In a bowl, combine heirloom tomatoes, onions, cucumbers, lemon juice and serrano peppers. Add a generous pinch of salt and pepper to taste.

Add olive oil and toss to coat. Set aside at least 20 to 30 minutes to allow flavors to set up.

Set a non-stick skillet over medium-high heat, add oil and sear chicken breasts in batches, if necessary, to not overcrowd pan.

Transfer cooked breasts to serving plate to rest, drizzle each with a little of tomato salad liquid and serve chicken with tomato salad on top or as a side. Season to taste with salt and pepper as needed.
