Wild Rice And Mushroom Pilaf

Recipe makes 6 Servings

3/4 cup(s) wild rice, uncooked
3/4 cup(s) brown rice, uncooked
29 Oz H-E-B Select Ingredients Beef Broth
1 1/2 cup(s) mushrooms, sliced
1 1/2 cup(s) shiitake mushrooms, sliced
2 shallots, chopped
3 medium garlic cloves, crushed
3 Tbsp unsalted butter
1 1/2 Tsp iodized salt
1 1/2 Tsp black pepper

Combine wild rice, brown rice and beef broth in a 3-quart saucepan.
Bring to a boil and reduce heat to low.
Cover and simmer 50-55 minutes until rice is tender.
Meanwhile, slice mushrooms, chop shallot and crush garlic.
Melt butter in a large skillet over medium heat.
Sauté shallots for 3 minutes.
Stir in garlic and mushrooms
Season with salt and pepper.
Sauté for 4 minutes or until mushrooms are just tender.
Drain rice.
Toss rice with mushroom mixture and serve while hot.
