Recipe makes 4 Servings

3/4 cup(s) all purpose flour
1 Tsp iodized salt
1 Tsp black pepper
2 H-E-B Cage-Free Large Brown Eggs, beaten
1 1/4 cup(s) panko bread crumbs
1/4 cup(s) unsalted butter
1/4 cup(s) vegetable oil
1 Lb Veal Scallopini, cut 1/4-inch thick
1 Tbsp parsley, finely chopped
1 lemon, cut in wedges

Blend flour, salt and pepper in a shallow bowl or flat dish.
Place eggs and breadcrumbs in separate shallow bowls.
Heat butter and oil in a large, non-stick skillet over medium-high heat.
Dip both sides of veal in flour, egg and breadcrumbs; place into skillet, and fry 2 minutes per side until lightly browned.
Sprinkle veal with parsley, and garnish with lemon wedges.
