Whole Roasted Cauliflower Gratin

Recipe makes 6 Servings

1 medium whole head of cauliflower
1/3 cup(s) olive oil mayonnaise
1 Tsp hot smoked paprika
4 Oz H‑E‑B Select Ingredients Sharp Cheddar Thick Cut Shreds

Preheat oven to 350˚F.
Wash cauliflower and remove outer leaves. Cut stem off flat at the base.
Whisk mayonnaise with paprika. Cover cauliflower with a generous coating of mayonnaise. Use your fingers to get all of the uneven surfaces.
Place on an oven safe-serving dish. Bake for 45 to 50 minutes.
Remove from oven and place cheese on top in a mound. Press down gently to stick cheese together.
Place back in oven and bake 10 to 15 more minutes or until cheese is nicely browned and cauliflower is firm/tender when a skewer is inserted.
